Copy-Cat Cafe Rio Chicken Salad Recipe

Cilantro Lime Rice:

Cook in about a tablespoon of olive oil a spoonful of minced garlic. When you can smell it, add in the water and cook the rice according to the recipe. When rice is done, stir in 1/4 chopped cilantro, 2 tbsp sugar, juice from 2 limes, and salt to taste.

Pico de Gallo:

4 tomatoes
1/2 onion
handful chopped cilantro
lime juice to taste
salt to taste

Pulse in a food processor till the right consistency

Cafe Rio Shredded chicken:

4 chicken breasts
1/2 container of Italian salad dressing
1/2 packet of ranch dressing
1/4 C water
juice from one lime

Cook for about 2 hours on high, or until you can shred it

Creamy Cilantro Lime Ranch Dressing

2 tomatillos
juice from 2 limes
1/2 C mayo
1/4 buttermilk (optional.. I only add it if I already have it)
salt to taste
handful of chopped cilantro

Process in food processor until a smooth consistency

We also do black or pinto beans, avocados, or guacamole.

 Just layer ingredients over chopped romaine, and it's delicious! I don't do the tortillas, but I'm sure they'd be yummy. Pour dressing on top.
